I can’t answer from the recruiter perspective, but from an employer perspective it’s because we want to hear you talk about it. It’s more about understanding your ability to express yourself. Plus there are limited things we can ask you about without running into issues - I was taught to only ask candidates about things written on their resume or things directly related to the job they are applying for.
