Has anyone ever pulled in the line level data from the sales order to the customer deposit PDF to essentially create a payment receipt?

can do it. you can pull the customer deposit amount value to sales order then print from there. rename the sales order text to something appropriate.
the correct way to do it is issuing the sales order printout, plus customer deposit receipt separately. at this stage, the two are separate. they will get married on invoice.
