Is there a way to override a stored field value? I have a line item field that I am trying to set the value when the stored value checkbox is selected

Stored Value just means that the value entered in the field is stored to the database and is not continually sourced from elsewhere. To overwrite you simply enter new data and save. Now that data is what is stored.
