Does anyone know if there is a way to approve/reject Inventory Adjustments?

I think there might be an approval process around cycle counts.

But as far as a standard inventory adjustment - no. And I wouldn't bolt on a custom field for "Approved" without making it crystal clear that it doesn't change GL impact or inventory impact.
