In the same workflow, some fields CAN be set 'Before load' and some cannot, with no obvious difference between fields. What's going on?

IIRC, at least some of those are fields that are dependent on another selection (e.g. what accounts are available are determined by your subsidiary selection). There might be a few more that are just because reasons netsuite
