Typically uninstalling removes the bundle components themselves. If they did extra customizations, those most likely do not go away but wouldn't be valid any longer due to the records not being there (potentially) after the uninstall. You'd need to double check me on that one though. If they don't go away, you can delete/inactivate those script deployments and that should get everything back to normal.

you should be OK if you go to customization -> scripting -> scripted records, you can select the records that are in the bundle and see if there are any scripts attached that aren't native to the bundle
