Can I expose the Closed Won - 100% option on a Quote transaction without having to process a sales order? Sales guys "know" they got the order, they just entered it in a stand alone sales order. Or do I have to fake it out by processing the order & then deleting it.

Create a new status that's named properly and has a probability of 100% then use the default Closed - Won for conversions.

I don't really want to add a new field - just use the Closed Won - 100% value in the existing status list.

Correct. That list is configurable. I just did the same for another customer where they've received confirmation for the opportunity or quote... an "it's on it's way" status where you're waiting for the document or confirmation to show up. Then when it shows up and is entered, the conversion will use the preconfigured Closed status
