ok so i have a quick sand box email question...   if the option is to "send email to Logged in user" that is the current email user and not another user addressed as a recipient that may be logged in as well, correct ??  I hate when i over think stuff

That option just sends any email that would go externally in Prod to your own email whenever you trigger something that generates an email.

There's something in the subject line that will say who the email would have gone to if it was in production.
