I'm struggling to find the correct setup on a transaction saved search that will automatically shoot an email every Monday morning for all sales orders created from Saturday 12am to Monday 8am (dynamic).

I'd do a transaction search;
Type: Sales Order
Main Line: True
Date Created: On or After (Relative - 2 days* ago)

That's assuming you're sending the email at 8am.

Does that start from 12am or 8am of Sat (assuming it's sent at 8am Mon)?
