I'd like to set up a "quick access" portlet for our sales team to enter completed tasks (phone call/ event / task). Right now, the quick add portlet only allows us to schedule activities.. not log them as completed.

This may not be the best solution, but I would create shortcuts for your users:

• New Call
• New Event
• New Task
This will allow them to jump to the form and quickly add/log these actions as completed.

You could also use Pop-up forms, this is a more condensed form available to end users.

I'll see if I can find the pop up form. what I'm trying to "quick link" are the fields highlighted in the below pic.
