Hi - I am looking to find out if it’s possible to automatically attach multiple email addresses sitting on a custom field on the customer and/or sales order object and auto add them to a the recipient field when sending an email message on an associated invoice. Is this possible via workflow?

yeah. Look in SA for a guide on how to do it

might require a few attempts at the search, but I'd start with "multiple email workflow"

It's a good starting point for sure. your mileage may vary slightly

of course - that only works when sending the email on record save

not on someone pressing the email button and trying to type up a message to go with it
