How do i create a workflow for a case record that will default the name of the user creating the case. on load of the case record

<@U2AF1TSTX> where are you trying to log the creator's name? In a custom field, or?

This uses a formula to populate the custom "Created By" field, but if you just wanted to grab the user's ID or something, you can use the "From Field" radio button instead.
