I'm trying to get a saved search together to show ITEM data, but only is the Inventory level has changed in the last 'x' minutes. I cannot see a way to do this. Inventory levels will change from Sales Orders, Adjustments, Movements, etc...

I would suggest joining criteria of Transactions : Date Created and filtering that with a time formula. Then only items with recent transactions will show.
