Ethernet over Powerline adapters work if your house isn't old. If its old and has different wiring, it may not work.

As long as its copper and relatively good condition there should be no issue.

The other thing I considered doing was setting up a proper mesh network.
wifi in my daughters rooms is pretty weak.

I put 1 Ubiquiti AP per floor for 5ghz and hardwired everything else. Works well. I put up the ubiquiti mesh network at my mom's house and it works well. The only downside is typically your speed gets cut in half per hop.

They don't need fast internet up there - just something that isn't dropping regularly.

Right. Just about everywhere in my house has 1 wall between my router and it.
There's a couple places I can stand in some of those rooms where I'd wind up with more than 1 wall, but otherwise it's a pretty open floor plan
