Is the only way that I can update a field on the Opp upon entry to a state on the subsequent SO through a workflow action script? I can't use a Set Field Value action, correct?

If you create the sales order via the same workflow this may be possible You would use the Transform Record and Subscribe to Record option in conjunction. Then you can trigger a transition in the Opp workflow based on criteria on the related sales order
