How do we setup our event management services within NS? Event booking (Is it usually just the Event record in NS?)

Do you just mean a calendar event, like for sales or service people? Yes, if so. Usually don't need to set up much, that record comes out of the box. If you need to add custom fields you can via CRM Fields.
