is there a way to hide the OVERRIDE field on the address window using script?

Try deploying a client script at the address form level. It should be possible.

That is a record level client script, You need to customize the address form for that country and attach the script there. There should be a tab called "Custom Script" or "Custom Function"

You need to do these for each address form that you have. If I recall correctly it will one for each Country you are using in your account
