Admins in our NetSuite are CC's on emails sent out of NetSuite, particularly invoices. Is there a way I can disable this for a particular admin?

Do you mean customer invoices within your instance? Cause that's not standard behavior; I'm an admin and certainly don't receive every outgoing invoice copied to me. There's like a workflow set up somewhere that is causing that behavior. Check the Active Workflows/Workflow History on the invoice record to see if there's any thing there first.
There also might be a Group set up where the admins are all included in said group.

Check under Setup > Company > Email Preferences. Under the Transactions subtab, there is a 'Send To All Administrators' checkbox. If that's checked, a copy of all transactions are sent to Admins of the system. If it's checked and you want to single out one particular admin and not others, might be out of luck there
