Is there a way to update Terms on a Quote (even if it isn't technically on the document). We had an issue where Terms were changed, but because there were open quotes made BEFORE it was changed, when a Sales Order is generated, it isn't updating the terms.

Multiple ways to resolve. One way is via a workflow which will update a field of not on the Form.

After Record Submit and just go in and edit those?

I would be thinking a scheduled WF. You won’t need to touch them. BTW you should be able to see the values via saved search. Then you wil have a before after check for yourself

I set up a search for that. Just need to update the field on two (so far).

You may continue to have this issue if new transaction get created through “copy” from the historical transactions
