can someone point me in the right direction on how I can combine subtabs into 1 subtab? right now I have various custom records as subtabs in a sales order form but it is getting a bit crowded so want to combine them under 1 subtab so it looks like below:

I believe this is handled on the field level of your custom records. When you have a field that has

Record is Parent

checked, you can specify which tab of the parent you that information display on. As an example of something I want to add the vendor tab on an item record.
