Can you customize the inventory detail field, trying to add a custom field in it

sort of - you can add a custom field to the Inventory Number record, but you can't add it to the Inventory Detail popup where you would enter it on, say, an Item Receipt

but it could be edited manually through the Inventory Number record - this just usually is a non-starter because the UI element isn't there where it should be
