is it possible to "lock" a field with a workflow the same way that a record gets locked?

You may use Set Field Display Type to Inline/Disable if you want to 'lock' it through WF. Like it has Normal display type initially and you want to 'lock' it afterwards

Also you could do it with Client Script on PageInit
