I am attempting to build a scheduled Workflow that sets field value for Sales Order item sublist field Commit based on results of a Saved Search. This field Commit does not appear to be an option. Does anyone know why or have a workaround they can suggest?

Looks like that field is not available through Workflow. It is available through scripting and therefore you could add it as a Workflow Action Script.
