I've created some custom records and linked them to the customer record. I need to source the values captured in this and populate them into a custom entity field via workflow set field value. Anyone have any suggestions?

You can make a customer saved search that links to your custom record and displays your field. Then use that saved search to source a field value on your customer record

But the value won’t be stored if that’s okay

Also do you need your customer record updated when the custom record is edited/saved?
Or can the customer record be updated on a schedule like every 30 min?
