Add a custom field and then update your script to populate that field with all values it sets. Alternatively undeploy scripts and redeploy 1 by 1. Or get strong point

Strong point is a customization monitoring customization. It will tell you all fields that it can see being used by script. an issue if they can't be seen because the script is locked, but good luck figuring that out
My custom field idea was a bad idea, disregard that. It would be very cumbersome to write
So the only proven method for knowing what scripts set what fields is to unplug the deployments and turn them on one at a time and then test and repeat until you see the field get set
