I have 2 roles, both with the Contact permissions set to Full. 1 role is able to in-line edit contacts from the customer dashboard, though the other is not. Both are using the same view as well. Can anyone think of anything else that could be different that wouldn't allow one role to do this?

Make sure both roles have edit level permission for contacts

Yes it is.. is user have clicking on inline edit of the sublist.

Would that be a user setting? or just the toggle switch that normally displays in a saved search?
Ah - this may be it. They are using 2 different published dashboards. I'm wondering if 1 was set up without "allow inline editing" checked.
@sam1128 Turns out we didnt check the "override user settings" checkbox when publishing the 2nd dashboard. Did this, and now it's working. That's for helping me through this

Which means she was using different search on her dashboard then. Which had no inline edit..

Can't confirm. Both roles were using the "Basic" view for Contacts. Not a saved one
