Is it possible for any kind of work around? Can anything be done?

Wonder that could be done via a custom field, sourced from wherever and linked to a work flow for the email component. Lot of effort, though.

It's actually fairly low effort - and yeah - custom field sourced from wherever and done via workflow is pretty easy. I can spin something up in under an hour - but I've also done it before.

I was stuck on how to create the multiselect list that was sourced from the customer contacts / emails

Oh - you won't be able to do it using multi select
it'll have to be a text field with comma seperated values

Gotcha, I am looking for a way to have a list of the emails handy on the sales order so that we do not have to go back to the customer record to then enter.

Maybe add a sublist so they can copy/paste from the sublist?

Trying to eliminate that step since it comes up on almost every order as we have multiple buyers / departments per customer

also - you might look into the "use pop up for email" on new email setting (or something like that)
and get rid of the "to be emailed" checkbox
and force people to use that popup to send emails
