A custom field will just source the value, not save it back if it's modified. Maybe a workflow would work to save it back to the native field, otherwise it will need to be scripted

Can't edit it on employees who have a corresponding user record with an Administrator role. The API user can't alter those due to other sharp edges in this ball of middle fingers
