I have two different workflows that are definitely running, executing actions, and I've confirmed they are set to Enable Logging; for some reason I'm not showing any logs after triggering the workflow. I am testing in one of our Sandbox Accounts, maybe that has something to do with it?

Is it just today and NetSuite acting up? Multiple people, including us are seeing scheduled scripts stopped running last night at some point and are still not triggering.

Sorry, missed this comment @Nina Leon. They started executing fine after that day, so maybe you were right.
