Hi, is there anyway to tell the last time a particular saved csv was used?

Not if they just hit run. If they did save and run then you'll see the last modified date date that saved mapping was changed. You can see the files that were run in the csv import status, or you could look do a saved search of system notes touched via csv, but neither of those tells you that it was this specific mapping that was used.
