Has anyone ever self-implemented SuiteBilling to an existing account? Anything to watch out for?

I do this as part of my work. There's lots to watch out for so maybe say more about your scenario? The number one thing I'd call out to anyone is, be aware SuiteBilling doesn't support any item types other than non-inventory and service items, and only supports those if Can Be Fulfilled/Received is unchecked.
If your current instance is dependent on other item types (or on editing the description of items on each order) you may have to do some item master work.

Interesting, thanks! We do have dropship/special order Kits that are fulfilled/received but have a related subscription, composed of fulfilled/received non-inventory items. So I guess the kit itself can't be a subscription but a non-inventory component of the Kit could? Is it possible to still base the subscription or RevRec start on the fulfillment date? Descriptions are not an issue. I'll be following along the Help Center article and the LCS course as we come up on implementation to hopefully answer my basic configuration questions.

@Kyle W - SuiteBilling does not support fulfillments in any manner. You can pretty much have only one Subscription rev trigger
