@amy we use a few of ours as sandboxes for integrated application that only need a limited set of customizations. In essence, they are stripped down, bare bones versions of our production environment with just enough customizations to make the integrated application work. Then, they can test and create whatever data they want, without interfering with people doing UAT in the full sandboxes.
