I am attempting to integrate via REST API, and without using any of the beta records. Does anyone have any suggestions on how to create Sales Orders? I was previously successful with the Sales Order beta record, but that has been disallowed by my client.

I dont think that is possible with REST API, you might want to use the SOAP API if you are avoiding Beta features
