You could probably add a custom checkbox field and call it "assign" and then have it inline edit - and workflow to populate the assign to at that point (probably a 30 minute to few hour workflow depending on your expertise level)

What's the logic behind approaching it the way you did? Why not build a workflow off the Grab Button and have the status set to 'New' Instead of processing?

The grab button is a hyperlink you can have in a saved search - I'm fairly confident that you can't build a workflow off of it, though I've never tried
