I'm not on my computer right now but just to be clear, that'll show the text AT THE BOTTOM OF THE LAST PAGE? I was repeatedly told that it's not possible, so I was in shock that it sounds so simple. But thank you so much!

It may not actually go to the very bottom of the page, though. That sort of layout isn't entirely possible with a single PDF. However, you can do a PDF set that has the T&C on its own page, positioned at the bottom, and make that the final PDF in the set.

I recently got around this by using the footer and keeping track of the pages. I used <pbr /> per page and on the last one, I added a footer to the <pbr footer-here /> and it put what I wanted on the last page at the very bottom

Hadn't thought of using the footer, but that's a good idea, as it would pin it to the bottom of the page. But, yes, you'll need to exclude it from all but the final page.
