If I use the

Convert to SDF Project

button on the Bundle Details page, will that affect the bundle at all? I’m hoping it will just leave me with a project structure and the bundle in place.

The bundle will not be affected. It'll generate a zip file of the bundle in your file cabinet under the SuiteBundles folder but not touch the contents of the bundle itself.
