I'd be curious to see how you solve this @Reed Dettrich Only way I could think to do this is a scheduled script that took the values and dropped them into a custom record so that it could then be searched upon.

Ill let you know if i figure it out. Maybe this is nieve on my part but it seems to reason that if you can pull inventory data for any day using the inventory valuation or financial statements there would be some way to count how many fo those days were = 0 for a given inventory item.
