list (currently contains Material, Material Overhead and Service)? or is the list not editable?

Setup->accounting-> accounting lists and add cost categories perhaps?

You can add new Cost Categories but it looks like the Cost Types are hard-coded and cannot be added to.

@al3xicon I've seen in some instances where the list is expanded with more values, but only when they are using advanced manufacturing. Makes me believe the select options are tied to certain features (e.g. Landed becomes available with landed cost enabled)
