Is there a way with a bundle or suiteapp or scripting to allow a Vendor to Edit a Purchase Order via the Vendor Center? We would like them to be able to let us know status on each PO line even if a custom field they interact with...

The ability to do this would require a suitelet that is marked available without login - a considerable controls risk.

You could potentially use a custom record that gets tied to the line and then is touched to a suitelet that is available without login to reduce the risk associated.
