On a sales order form, when changing the customer (entity) the ship-to field is set to null. Is there a way to save the ship-to and reset it back to it's original value after changing the customer field?

You lost me.
Are you saying "I'm changing which customer gets the A/R for aging purposes, but I want the ship to address from the first value to stay" - or is it "some idiot changed the customer - so I'm setting it back to the right customer, and need the original address to show back up"

I answered my own question. Workflows aren't the right tool for this job.
