We just enabled a workflow to create a record and it was working fine in sandbox, but the numbering is off in production. I check the record page and all the settings are the same. In sandbox the IDs were order 1....2....3. In Prod I have 1....101....201

If you are reffering to internal id, then such numbering is totally fine. You can't have any impact on how Netsuite assings internal id. And this numberings isn't always incremented by 1.
