when trying to set one date/time field into another on BeforeSubmit

I’m guessing you are using a set field value action Are you using the field to field mapping? Or are you using a formula to set it?

Did you get this to work? I write the value to a text field also. to see what Netsuite is actually setting. Also, the date field you are setting, is it available to set for instance Date Created Last Order and others cannot be set. Try doing it as a "formula" date value also so you can format it yourself.

Sorry for the delay. Turns out the fields are actually being set but the workflow log is telling me they have been skipped and not set successfully. Very Very Odd!
