While you are here.. do you know why when you deploy the out of the box JE approval workflow, that they use additional Approval Status fields including approver, next approver, etc.. Approval status/Approval? Or do you know the best practice with dealing with it? (Set both, hide both, etc..)

Those fields are shown when you enable approval routing in the Setup > Accounting > Accounting Preferences
