Don't have any conditions set... thought it would just be an easy send email to assignee... guess I was wrong. 🙂

ages ago i wrote a workflow to send an email to a person associated with the record...i ended up adding a custom field to grab the email from their record and show it on the form...from there it worked fine but was surprised i had to go that far.

I actually attempted to do something similar, but it didn't seem to grab the email either... it's almost like the assignee field isn't really there.
