I don't want it to post any variances or transactions but I just want to use it for information in reporting and other things. Is this possible or do I have to setup custom fields/records to track this?

Yes, you can capture landed cost information on Inbound Shipments, but the standard Landed Cost feature is designed to create inventory cost adjustments and GL impact. If you enter landed costs through the native landed cost subtab and calculate/apply them, NetSuite will post the related cost adjustments/variances.
