@Joshua Lapinski Create a custom checkbox field on vendor bill record. In your saved search, you can inline edit this checkbox and check the vendor bills you want to approve. Create another saved search which list all the vendor bills which is approved for processing and use this saved search in your workflow which will be deployed on vendor bill record and you can define record transform action to change it vendor payment. you can set the workflow to run as schedule
