Has anyone experienced where you create a new field on a custom record or on a transaction and then go to add that field to a saved search and it is NOT available in the list. Then you try to use the field ID in a Formula Text and it says "Field Not Found" even though you can see the field and it has a value for some records? Does anyone know what causes this?

Caching usually. I've had that happen, but logging out of NS, clearing your cache, closing your browser, and then logging back in usually fixes it.

You are storing values on the field correct? if not, you won't see this field in a saved search.

I've had a similar but different issue where I create a new field but someone else can't add it on to their saved search - but it was the same solution from RJMNS

yes store value was checked and there were no permissions or restrictions.
@RJMNS the caching fixed it, but it kept happening. I added a field, couldn't find it in SS, logged out, cleared cache, closed browser, logged back in and it showed up>
Then i did it 3 more times right in a row as I kept making new fields. was quite annoying, But thanks everyone!

yeah I go in weird spurts where I have problems with caching on Saved Searches. I'll have all sorts of issues with a variety of things for a couple weeks or a month and then no problems for months or years.
