I can change the source from to 'Default Service Plans', and make it equal to the default.  However, then users can change the item to be any item in the system, rather than limiting it to the 'Allowed Service Plans'.

I’m not understanding the relationships?  Are there 3 fields involved here?
1 field defines the default value a different field define the filtering?

So it looks like the item selected provides your default value

Just know the filtering may conflict with the sourcing

<@U03GYQZTZDW> Yep, that's the setup.  One field on the item record is the default.  The other is the allowed items.  The problem is that this is a line item column, not a field, so the options I have for defaulting are a lot more limited :confused:.

In any case... I just scripted something up.  Not the best, but not the worst solution.
