We use custom records a lot. I want to start encouraging our team to use the Communications section on custom records, but it’s a bit of a hassle as employees don’t show in the recipient drop-down unless they are a value in a custom field on that record type somewhere. I know staff can just type in the email address of the recipient, but people are lazy. Any workaround for this to make all employees show in the drop down when sending an email?

I don't know the answer but am now curious as well.

After seeing this yesterday, I went down a bit of a rabbit hole and couldn't find a way, unless the employee was somehow attached to the record.

you get anywhere with this? I'm curious also. Can you not make that field a list and attach your employee list to it?
