In the lot/serial assignment - the value remains committed to the order after removing the lot/serial assignment. It might actually play nice with your example because the lot might still be allocated to the SO if it gets cancelled - at which point you might be able to edit it and remove the lot assignment and then assign it to a new order. That said- I'd try this out in sandbox to validate.
